Avocado Verde Chicken Burritos

Avocado Verde Chicken
1 16-Ounce Container Garden Fresh Gourmet® Avocado Verde Salsa
2 Boneless, Skinless Chicken Thighs
1 Cup Chicken Stock
1 Teaspoon Cumin
1 Teaspoon Paprika
Salt To Taste

½ Cup Rice
Salt To Taste
1 Tablespoon Lime Juice
¼ Cup Chopped Cilantro

2 Tortillas (12 Inches Each)
¼ Cup Sour Cream
1/2 Cup Cooked And Drained Black Beans
1/2 Cup Corn
1/3 Cup Shredded Lettuce
1/4 Cup Shredded Cheese


Place the skinless chicken thighs in a saucepan with 1 cup of Garden Fresh Gourmet Verde Salsa, stock, cumin, paprika, and salt. On medium heat, simmer for 20 minutes. Using two forks, pull the chicken into shreds. Continue to simmer for another 15 minutes. While the chicken is cooking, bring 1 cup of water and ½ teaspoon of salt to a boil. Add ½ cup rice, and reduce heat to low and cover. Simmer for 20 minutes, then stir in the lime juice and chopped cilantro. Assemble the burritos: using the 12” tortillas, fill with chicken mixture, rice, more Garden Fresh Gourmet Avocado Verde Salsa, and ½ of the sour cream, black beans and corn. Add lettuce and cheese; roll up and serve.
