Featuring Garden Fresh Gourmet Mango Peach Salsa.
Serves 4 to 6 as an appetizer.
1 cup quinoa, uncooked
2 cups water
1 teaspoon sea salt
1 bay leaf
1 cup corn flour
1 tablespoon jalapeño, seeded and minced
½ cup cilantro leaves, minced
1 ½ tablespoons green onion, minced
½ teaspoon sea salt
1 cup water
2 tablespoons vegetable oil
1 16 oz container Garden Fresh Mango Peach Salsa
½ cup cilantro leaves, coarsely chopped
In a large bowl, add corn flour, cooked quinoa, jalapeño, minced cilantro, green onion, salt and water. Mix well and allow to rest for 20 to 30 minutes. In a cast iron griddle or skillet on medium-high heat, add a small amount of vegetable oil. Form cakes by pressing the batter into a tablespoon, then level off. Gently place cake on griddle and repeat until the griddle is full. Turn when brown and cook until other side is brown. Transfer to a plate.
