    Spinach & Walnut

    Crimini Mushrooms

    Spinach & Walnut Crimini Mushrooms

    Featuring Garden Fresh Gourmet Spinach Dip.

    Makes 12 mushroom caps.

     

    Filling

    1 container Garden Fresh Gourmet Spinach Dip

    1 ½ tablespoons roasted red peppers, diced

    1 tablespoon flat leaf parsley, finely chopped

    ½ toasted walnuts, chopped

     

    Mushrooms

    1 teaspoon extra virgin olive oil

    2 tablespoons red onions, thinly sliced

    ½ teaspoon garlic, minced

    1 pound crimini mushrooms, stemmed

    1 teaspoon balsamic vinegar

    ¼ teaspoon sea salt

     

    Instructions

    Mix 3 tablespoons of Garden Fresh Spinach Dip together with the other filling ingredients.  Reserve.  In a small skillet on medium-high heat, cook oil, onions and garlic for one minute. Add mushrooms, balsamic vinegar and salt, cover and cook for 3 to 4 minutes until the mushrooms are cooked.  Remove the mushrooms and reduce the liquid until the onions are coated.

     

    Stuff each cap with ½ tablespoon filling then garnish each mushroom with a parsley leaf and a small piece of roasted red pepper. Arrange mushrooms on plate with the onions (on corner of plate) to accompany them.

     

    Tip:

    Roasted Red Peppers are available in a jar in most grocery stores.
