    Mediterranean Spinach Quesadilla

    Featuring Garden Fresh Gourmet Spinach Dip. Serves 4.



    2 tablespoons extra virgin olive oil
    ¼ cup yellow onion, finely diced
    ¼ teaspoon black pepper pinch of ground nutmeg
    ¼ teaspoon sea salt
    2 teaspoons lemon juice
    6 ounces spinach leaves, stemmed and chopped
    ½ cup stem tomatoes, finely diced
    ¾ cup Garden Fresh Spinach Dip
    4 whole wheat tortillas, ten to twelve inch diameter



    In a 10 inch skillet on medium-high heat, add 2 teaspoons olive oil, then onions until they begin to sizzle. Mix in black pepper, nutmeg, sea salt, lemon juice and spinach. Turn down to medium-low heat, cover and cook until the spinach is wilted. Stir in tomatoes and spinach dip. Turn off heat. Lay the tortilla onto a cutting board or a clean, flat surface and spread 1 cup of the mixture onto one-half side of a tortilla. Fold over to a half-moon shape and repeat with second tortilla. In a 10 to 12 inch saute pan on medium-high heat, add half of the remaining olive oil. Gently lay the two stuffed tortillas in the pan. Brown one side and turn over. Once other side is browned, move to a cutting board. Repeat with the remaining olive oil and quesadillas. After the quesadillas have cooled for a few minutes, cut each one into into 4 wedges. Serve warm with Garden Fresh Gourmet Jack’s Special Salsa.
