    Dagwood

    All the recipes on our site have been developed and/or tested by Chef George Vutetakis, our illustrious head of research and development.

    Garden Fresh Dagwood

    1 sandwich.

     

    Ingredients

    ½ cup wilted Lacinato kale

    ¼ teaspoon salt

    ½ mini baguette

    1 container Garden Fresh Naturals Sweet Potato
    Hummus with Curry

    1 Kumato or Campari tomato, ¼” sliced

    1 English cucumber, sliced lengthwise 4” by 2” by ⅛” thick

    1 roasted red pepper, cut lengthwise into 4 strips

    1/2 red onion, cut into ⅛” thick rings

    ¼ cup fresh parsley, coarsely chopped

     

    Instructions

    Place kale in steamer for 2 minutes or until slightly limp.  Place on cutting board, chop coarsely and sprinkle with salt.  Reserve. Cut the baguette in half lengthwise and spread 3 tablespoons Garden Fresh Sweet Potato Hummus on each half.  On the bottom half, lay 4 tomato slices in a row, then evenly place 2 cucumber slices on the tomatoes, then the roasted red pepper strips, then 3 onion slices, then the parsley and finally the kale.  Top with the other half of the bread and serve.

     

    Tips:

    Fresh mini baguettes are often available in your favorite grocery store deli or bread area.

    If cutting sandwich into slices, use a serrated knife.
