Featuring Garden Fresh Gourmet Black Bean and Corn Salsa.
2 teaspoons olive oil
1 1/2 cups red onions, diced
1 1/2 cups celery, diced
1 cup green pepper , diced
2 16oz Garden Fresh Black Bean and Corn Salsa
1 12 oz can diced tomatoes
1 12 oz can pinto beans, drained and rinsed
1 12 oz can kidney beans, drained and rinsed
1/2 teaspoon ground allspice
1/2 teaspoon sea salt
1 cup toasted cashew nut pieces
In a 4 quart saucepan on medium high heat, cook the olive oil, onion, celery and green pepper until the onions become clear around the edges. Add Garden Fresh Black Bean and Corn Salsa, diced tomato, pinto beans, kidney beans, allspice and sea salt. Bring to a simmer and cook for 15 minutes. Add cashews and simmer another 15 minutes. Serve hot.
