Featuring Garden Fresh Gourmet Black Bean & Corn Salsa. Serves 4.
1 3/4 cups water
1 teaspoon sea salt
1 bay leaf
1 cup quinoa, uncooked
1 16 oz container Garden Fresh Black Bean & Corn Salsa
1/2 cup cilantro leaves, chopped
In a 2 quart saucepan, bring water, sea salt and bay leaf to a boil. Add quinoa, bring to a boil, then cover and turn down to a low simmer. Cook for 15 minutes until the water is cooked out and the grains are puffed. Transfer quinoa to a mixing bowl, add the Black Bean and Corn Salsa and cilantro. To serve, transfer to a plate and garnish with cilantro, tomato or green onions. May be served hot or cold.
