    Baked Falafel

    Baked Falafel Pita Pocket

    Featuring Garden Fresh Naturals Tabouli Hummus. Makes 7 pita pockets.

     

    Falafel

    1 (15-ounce) can chickpeas, drained and rinsed

    1/4 cup onion, minced

    1 teaspoon garlic, minced

    2 teaspoons ground cumin

    1/2 teaspoon ground coriander

    1/2 teaspoon salt

    1/4 cup cilantro leaves

    1/4 cup parsley leaves

    2 tablespoons olive oil

     

    Preheat oven to 425 degrees F. In a food processor, pulse all falafel ingredients for 10 seconds. Scrape down sides of bowl, then pulse for another 10 seconds or until all ingredients are well incorporated but mixture is still slightly coarse and grainy. Form mixture into 16 falafel patties ½ inch thick and 2 inches wide. Bake on a parchment-lined baking sheet for 20 minutes. Turn the patties and bake an additional 20 minutes or until crisp and browned.

     

    Tahini Sauce

    ½ cup tahini

    ¼ teaspoon sea salt

    3 tablespoons lemon juice

    ⅓ cup water

     

    In a small bowl, whisk together tahini, sea salt, lemon juice and water. Reserve.

     

    Sandwich

    4 whole-wheat pita pocket breads

    1 container Garden Fresh Naturals Tabouli Hummus

    1 cup romaine lettuce, chopped

    2 tomatoes-on-the-vine, cut into thin wedges

    2 small Persian cucumbers or ½ English cucumber cut into 3 inch spears

    ½ cup red onions, finely diced

    Fresh mint for garnish

     

    Soften pita bread in oven for 2 minutes. Cut pita into half-moon and spread 2 tablespoons Garden Fresh Tabouli Hummus on inside-bottom of pocket, then add ⅛ cup lettuce, 3 to 4 tomato slices, 3 cucumber spears, 1 tablespoon onion and two to four falafel. Drizzle with tahini sauce and garnish with fresh mint. Repeat. Serve right away.
