    Arugula Pesto

    Arugula Pesto Crostini

    Featuring Garden Fresh Gourmet Original Hummus. Serves 8.



    1 multigrain baguette
    2 tablespoons extra virgin olive oil


    Preheat oven to 350 degrees. Slice the baguette into ½ inch thick rounds. Spread evenly onto a parchment-lined baking sheet, then sprinkle oil onto each slice. Bake for 15 minutes or until lightly toasted.


    Arugula Pesto

    2 cups fresh arugula leaves
    3 tablespoons pine nuts
    ½ teaspoon sea salt
    1 teaspoon lemon juice
    ¼ teaspoon garlic, minced
    2 tablespoons extra virgin olive oil
    2 tablespoons grated parmesan cheese (optional)
    Garden Fresh Original Hummus
    1 tomato, thinly sliced


    Combine the arugula, pine nuts, salt, lemon and garlic in a food processor, pulse until coarsely chopped. Add the oil and optional parmesan cheese then process until smooth. Spread 2 teaspoons of Garden Fresh Original Hummus onto each crostini. Top each with a tomato slice and then a dollop of arugula pesto. Serve right away.
